It’s my little caterpillars birthday in 35 days it may seem like a long way off but it really isn’t.
As most Of you know Hayden has a dairy allergy and possibly a wheat and gluten intolerance but we won’t know until he has an allergy test after he is one.

I wanted to show you out there that it is possible to make a dairy free birthday cake and here is the recipe hope you guys like it

You will need
• 300 g self-raising flour
• 250 g castor sugar
• 340 mL water or baby’s formula (in our case nutramgin) 10 scoops to 300 mL water
• 9 tablespoons oil (not olive oil)
• 2 tablespoons vanilla essence for toddlers
• 2 tablespoons of baking powder for older children

You will want to use a shallow oblong cake tin

1. Preheat are then to 180°C (gas mark 4)
2. Sieve flour into bowl, add sugar and stir
3. Beat all cake ingredients together to a tick batter consistency with a whisk
4. Place in an increased cake tin lined with grease proof paper
5. Cook for 45 minutes or until golden and springs back when pressed
6. Keep in the tin and cover with a tea towel so it doesn’t crack
7. When cold remove from tin and decorate with icing

How to decorate
• Make icing using 175 g sieved icing sugar and one and a half tablespoons warm water
• Alternatively top with dairy free buttercream. Beat 120 g of dairy free margarine with a wooden spoon until soft gradually mixed in 225 g of icing sugar. Add 1 tablespoon of water and beat until fluffy
(Warning: check ingredients if your child has an egg allergy some icing sugar may contain egg whites)

Chocolate cake
• For a chocolate cake and 50 g of cocoa to the flour and for chocolate buttercream mix 1 tablespoon Cocoa powder with the water

  3. You’re right, there’s a lot of talent going on there, those are all great (Peppa being my fave, I love that show!).

    • Super cool right?! I can honestly say I have never watched an episode of Peppa. We switch between Disney & Cbeebies … Must have a watch and let you know what I think lol
